Lemon Poppy Seed Cake
Ingredients

¼ cup Poppy seeds
½ cup Milk
1 cup Unsalted butter, room temperature
2 cups Sugar
4 Eggs, large
1 cup Sour cream
⅓ cup Lemon juice
2 tbsp Lemon zest
23 drops Yellow food coloring
Garnish
¼ cup Powdered sugar
Instructions

SOAK poppy seeds in milk for 2 hours or overnight.

PREHEAT oven to 350 °F.

GREASE and flour a 10-cup Bundt pan.

CREAM butter and sugar. ADD eggs, one at a time, beating well after each.

ADD poppy seeds with milk, sour cream, lemon juice and zest; mix well.

ADD Sopaipilla Mix, mix well. STIR in just enough food color (2 or 3 drops) for light yellow batter.

POUR batter into prepared pan.

BAKE 55-60, minutes or until toothpick comes out clean.

IMMEDIATELY invert on cooling rack after removing from oven. COOL completely.

DUST with powdered sugar.
