Snickerdoodle Cookies

Ingredients

  cup Sugar
 2 tsp Cinnamon
 1 cup Unsalted butter, room temperature
 1 cup Sugar
 2 Eggs, large
 1 tbsp Vanilla

Instructions

PREHEAT oven to 350 °F.

MIX sugar and cinnamon in a small bowl; set aside.

CREAM butter and sugar in a medium bowl.

ADD eggs and vanilla; mix until well blended.

ADD Sopaipilla Mix slowly, until completely incorporated.

MAKE 1" round balls with dough and roll in sugar mixture until completely covered.

PLACE balls on cookie sheet lined with parchment paper at least 2" apart.

BAKE 12-15 minutes.

COOL cookies slightly on pan before moving cookies to wire rack to cool completely.
